Bestest Banana Bread EVER

My 8 yo has a latex allergy. We recently discovered this as I was in the hospital having baby #5. she was playing with a latex glove and faster than you can say PUSH! she had hives all over her face. This would explain the anaphylaxic reaction she had in the hospital a few years earlier.

Anyway, I'm rambling again.

She is quite distressed that as part of this allergy thing, she can no longer eat bananas. She's not had a severe reaction to bananas, but we don't want to take the chance.

Still, that doesn't mean the rest of us have to suffer a banana-less existence (no flames please)

I found this recipe at all-recipes and it is truly the best banana bread you will ever taste. if you don't want to take my word for it, 2000 other reviewers have pretty much said the same thing.

For this recipe, my special helpers were the 5 yo and the 3 yo. Five year old did banana duty. Three year old helped sifting the flour.


Banana Banana bread

INGREDIENTS

* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 cup butter
* 3/4 cup brown sugar
* 2 eggs, beaten
* 2 1/3 cups mashed overripe bananas i used 5 bananas

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan. i sifted the dry ingredients into the wet and used a wooden spoon to mix it to just moistened
3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

my oven cooks hot so it was at a 325 oven for us. also 22 minutes for muffins.
